If you love rice like I do, then this will become one of your most eaten raw till 4 dinner choices.  It’s so quick and easy to make, with minimal prep time.  Just rice, canned tomatoes, mushrooms, and spinach.  And spices to taste, of course! 830 calories and you won’t feel hungry the rest of the night!

I prefer Organic Thai Jasmine Rice as it just tastes great and has the perfect consistency for me.  As for the tomatoes, any kind of low sodium chopped or whole tomatoes will do. I’ve been buying Pomi brand tomatoes lately as I hate the thought of any chemicals in the tin cans.  That’s unfortunate, as my all time fave canned tomatoes are the official Italian San Marzano tomatoes by Cento.  These are the perfect canned tomatoes, but I try not to eat out of cans too often.

As for the rest of the ingredients you can add what ever vegetables you want to your tomatoes, I just prefer the chunkiness and taste of mushrooms, and I always like to get some spinach in on a daily basis.  Sometimes I’ll add red or green peppers, zucchini chunks, etc.  Just add what you like that is still Raw Till 4 approved.

I also add pepper and few shakes of chili peppers, and I throw in basil or italian spices mix, and some turmeric.  The turmeric doesn’t really add any to the flavor, but does seem to have some health benefits according to my research.

I usually just throw all the veggies and spices in a pot with the tomatoes, and simmer for the 18 minutes that it takes to cook the rice.  Then while you let the rice sit for 5 minutes, I add in the spinach so it’s not over cooked.  Then throw the rice in a BIG bowl, and pour in that tomato goodness.

You’ll find that this raw till 4 cooked dinner will give you a ton of vitamin K, vitamin C, B2, B3, B5 and B6 and half your folate requirements.  It also give you 82 % of your copper requirement, 76 of your iron requirement, and 39% of your manganese.

This meal gives you 182 grams of great carbohydrates, 21 grams of protein!, and only 1.2 grams of fat. And the sodium?  This meal only gives you a measly 93 grams of sodium!  You WILL feel great after eating this meal, thanks to the low fat and sodium, and the high quality carbohydrates.  Your belly will be very full after eating all this.

    can i add salt into the rice??

      You want to try to limit sodium, as per the raw till 4 guidelines so you shouldn’t add salt. But then again, if you managed to not have any sodium then a little wouldn’t hurt. but you’ll soon find that salt tastes bad.
